Cranberry Relish with a Twist.
3 cups (or one bag) of fresh cranberries
2 large tangerines or 2 small oranges
3/4 cup of sugar
1 cup of roasted walnuts
Cut one tangerine/orange with peel on into cubes
In a blender cut up coarsely.
Add fresh cranberries and keep cutting it up coarsely.
Peel the other tangerine/orange and cut by hand into small pieces and add to the mixture.
Mix in the sugar.
Chop walnuts and roast in pan.
Just before serving add the walnuts to the relish.
I usually double up the recipe. The leftovers are delicious over vanilla ice cream.
